Ever since I wrote a story about my wife Roxanne’s roux-making skills (read the story here), it has become as famous as the Acadiana Table cookbook in which it is featured. For a long time, folks have asked where they can buy it, and now we are happy to say it is in retail distribution. Here are the answers to most of your questions:

The Acadiana Table cookbook and Rox’s Roux: two things you need to cook authentic Cajun food.
What makes Rox’s Roux so special?
It is made to Rox’s exact formula by a roux-making family in Acadiana. Deeper, darker, richer, this is roux that goes a step beyond most commercially made roux products. This magic ingredient descends into the dark reaches of flavor to make an authentic rural Cajun gumbo, a remarkable sauce piquant, or a memorable fricassée. These are the fundamental Cajun recipes that become extraordinaire when made with Rox’s Roux. And there are so many other great roux-based recipes in the Acadiana Table cookbook.

With her name on the product, Rox gives her stamp of approval to every jar.
So, why jar and sell the roux?
Three reasons: consistency, convenience, and to bring Cajun cooking to the world. Yes, it is our mission to promote our Cajun and Creole food culture to everyone, no matter where they live. But think about it, if you have to spend an hour making a roux from scratch every time you cook a Cajun recipe, it limits those that will even try it once. Oh, we still profess that everyone should learn to make a roux and pass it on to the next generation; it is the key to keeping our heritage alive. But the convenience and consistency found in a jar of Rox’s Roux mean that home cooks can now experiment freely and frequently with Cajun recipes. And this is an overriding goal of Acadiana Table.
